“During the spring semester of 2025, we served an average of 7,300 student visits per month and anticipate more than 70,000 visits by year’s end, highlighting the critical need for consistent food donations.  Through a partnership between the Wellness Center and Christner’s Prime Steakhouse, weekly food donations are made to the Mary Lee Taylor Foundation for Single Mothers, strengthening assistance for single mothers in the community. This collaboration also fostered an expanded partnership with the UCF Knights Pantry, which distributed 19,376 pounds of food between March 24, 2025, to current—including 12,040 pounds of produce, 2,613 pounds of bread and bakery items, 3,051 pounds of cold items, 1,490 pounds of frozen goods, and 805.6 pounds of nonperishable items—significantly increasing food access for those in need. 

In 2025 year the Knights Helping Knights Pantry began receiving donations from Corey Rolle and his

incredible partners. In 2026 they have been able to donate even more. Every week he brings us

amazing produce and food donations that help our students. Here are some details about what has

occurred since he started supporting us in late spring.

- Since January of 2026, they have donated over 104,300 pounds of food.

- Most of the food was produce which is our food group that hardest for us to source so truly an

incredible donation.

- Student leadership at the university has directed us to specifically increase our produce offerings.

His team made an enormous difference to something the student body at-large voted for.

- We saw an average of 7,600 students visits a month during spring semester and have only just started

fall semester in which we expect even higher averages

- By the time the year ends we anticipate students will have walked through our doors over 70,000

times. We would not be providing fresh food to so many of them without Corey’s contributions.

Corey’s team and network have provided incredible donations to the Knights Helping Knights Pantry

and I know continue to do good work all over Central Florida. We are grateful for their stewardship and

helping others who need a helping hand in our community.

"My experience with the Mary Lee Taylor Foundation showed me how meaningful connections and genuine advocacy can create opportunities that may otherwise be out of reach.While attending UCF, I worked as the Assistant Manager of the Knights Helping Knights Pantry. This is where I had the opportunity to meet Corey from the Mary Lee Taylor Foundation. I personally helped Corey get started as a recurring donor to the pantry. Through the Foundation’s recurring donations, UCF students were able to receive fresh produce and nutritious food to help fuel them while pursuing their education.As Corey continued his support of the pantry, he also took the time to learn about my goals and advocate for me. Through his connections, persistence, and willingness to continue pushing for an opportunity on my behalf, he helped me secure a highly competitive Crime Analysis internship with the Orange County Sheriff’s Office. This was especially meaningful to me because the Crime Analysis unit and the Orange County Sheriff’s Office were exactly where I hoped to begin my career after college.With Corey’s support and the support of the Mary Lee Taylor Foundation, I am now able to graduate with greater confidence in my career path because of the experience and skills I gained through that internship. What started as a connection through a food pantry ultimately became a professional opportunity that directly aligned with my long-term goals.I am incredibly grateful for the time, effort, and persistence Corey and the Mary Lee Taylor Foundation invested in me. Their support has had a lasting impact on my career path, and my experience is an example of how funding the Foundation can translate into real opportunities, meaningful connections, and lasting outcomes for students and families."

Corey’s support of Knights Pantry has gone far beyond the generous fresh produce donations he consistently provides to our students. He has also taken the time to invest in me personally by offering mentorship, sharing advice, reviewing my resume, and helping me make connections at UCF. What has meant the most is that none of this was expected of him; he simply chose to take an interest in my growth and future. His generosity is reflected not only in what he gives to Knights Pantry, but in the genuine care he shows for the students and people behind it, and I am incredibly grateful for the impact he has had on both our campus community and me personally.

They are creating stability, restoring dignity, and ensuring that no student or single mother in our community has to face hunger alone. In addition to supporting college students and families, the Foundation also extended its impact last year by donating food and resources to students and faculty at Gateway High School in Kissimmee, employees of Fox Rent A Car in Orlando, the City of Eatonville Library, and several churches throughout the community, further expanding its reach to those in need.

The foundation serves single mothers across Orange, Seminole, Lake, Osceola, and Palm Beach counties, providing support to families throughout these regions. Among the single mothers served, the majority are hidden figures, having strong educational backgrounds, with 75% holding at least a bachelor’s degree, 25% having earned a master’s degree or higher, and 5% achieving a doctorate. This reflects the foundation’s work with highly motivated women who are pursuing stability and opportunity for themselves and their families while balancing the responsibilities of single parenthood.
